Award-winning Argentinian Chef Miguel Escalante is flying in from Republica Restaurant (previously Otto & Icebergs in Sydney) and joining Head Chef Francisco Smoje in the kitchen at Barrio Eatery & Bar for an Argentinian feast with Byron Bay market produce and fire.

“After cooking in all the continents and the last 10 years working as a successful chef in my home-land of Argentina, I am looking forward to returning to Australia (my second home) where I spent many years as a chef, and sharing my new South American techniques and cooking style while using the best produce of the Northern Rivers. I have heard wonderful things about Barrio’s co-owner Francisco Smoje from local Byron Bay friends and this is a great opportunity for both of us to join forces and create an incredible dining experience together.”

About Chef Miguel Escalante

Chef Miguel Escalante is a restless traveler who discovered the kitchen as his vocation and place in the world.

Miguel has traveled around the world in search of new cooking techniques; working in renowned restaurants and hotels in Europe, Latin America, United States, New Zealand and Australia, where he lived for more than 10 years in Sydney working at Otto, Icebergs, Pier and Teppanyaki.

On his return to Argentina, he won best Restaurant of the year and Best Gourmet Restaurant at Fusco before opening Republica Restaurant in Cordoba, which is renowned for using local and organic produce while combining international cuisine with Argentinean flavours.
